Yuka: A root from Peru and a yummy dip to use in the Calibowls

I got this recipe from a good friend who lived in the Bay Area. She is originally from Peru and is now living back in Peru. It is always great to add an authentic dish to your meals.

Yuka is a root that not all stores carry i have found it at Safeway and food Max. you can also pick up a CaliBowl at Safeway"s culinary stores.

How to prepare:
Peel yuka root, cut into dipping size pieces.
boil water and boil until you can poke a fork through the pieces.
Drain pat dry. Put the pieces of Yuka on a cookie sheet and bake at 400" for until lightly brown.

Dipping sause to be used in a CaliBowl.

1 cup of evaporated milk, panela cheese from el mexicano or any other mexican market, 4 yolks (yellow part of the egg cooked) put the cheese in pieces in the blender, add the milk if you think it is too thick add more milk, add the eggs and blend. for a spicy dip add hot sauce to the blender.

Thanksgiving Salsa

1can whole berry cranberry sauce
1 small white onion chopped
juice from 1 lemon
1/2 cup chopped cilantro
1 tablespoon chopped jalapeno

Serve this one in your CaliBowls

Chicken Gumbo Recipe 3 c chicken broth (mine is homemade, canned stuff is stronger) 1 c cut up chicken 1 c diced tomatoes (if you use canned tom's, add juice; if fresh add sm can tomato sauce) 1/3 c rice 1/4 of a bell pepper, chopped 1/4 of an onion, chopped 1/2 c corn 2 tsp dried basil (less if fresh) 1/2 tsp pepper 1/2 tsp garlic salt Make sure you use cooked chicken; put all ingredients in a pan, bring to boil, simmer until rice is done. Enjoy!
