Unbelievably Good Fruit Dip

This creamy fruit dip has only three ingredients. If you want a simple dip that's the perfect complement to fruit, especially strawberries."

Ingredients
1 (8 ounce) package cream cheese, softened 1 (14 ounce) can sweetened condensed milk 1 teaspoon fresh lemon juice

Directions
In a medium bowl, blend cream cheese, sweetened condensed milk and lemon juice. Cover and chill in the refrigerator at least 3 hours before serving.

Making this Potato Salad for Forth of July In The Big Sur Bowl

5 pounds Russet potatoes (about 8 medium Russets)

1 1/2 cups real mayonnaise (NOT miracle whip)

4 tablespoons prepared mustard (regular, dijon or a mixture of both)

3 whole green onions (sliced up to the darkest green part)

8 whole small sweet pickles

1 teaspoon kosher salt (or more, to taste)

1/2 teaspoon paprika

1/2 teaspoon black pepper

4 whole hard boiled eggs

fresh dill, chopped, to taste (may sub for pickles as well if you don't like that taste)

Directions
Hard boil eggs several days before; keep in fridge.

Cut potatoes in halves or thirds, then boil until fork tender. Drain. Mash potatoes or run them through a ricer or food mill to make them extra fluffy. In a Big Sur CaliBowl Fold potatoes together with mayonnaise, mustard, green onions, salt, pepper, and other seasonings you like. Fold in pickles and eggs, then taste for seasonings, adding more salt, mustard, or mayo as needed. You can also splash in juice from the pickle jar if salad needs a little moisture. Generously sprinkle dill over the top.

Assemble salad up to 24 hours in advance. Cover and keep refrigerated

I seriously can't get enough of these bowls!!! I use these bowls with all my meals, even with meals that do not require a bowl! CaliBowls just make my meals so much easier. I made this for a group on new years day served it is the CaliBowls. They loved it and requested the recipe.
1 8-oz. pkg. cream cheese, softened
1 Tbsp. lemon juice
1 tsp. dried Italian seasoning
3 cloves garlic, minced
1-1/2 cups prepared hummus
1 cup chopped cucumber
1 cup chopped tomato
1/2 cup chopped pitted Kalamata olives
1/2 cup crumbled feta cheese
1/3 cup sliced green onions
Pita chips and/or multigrain tortilla chips
Directions
1. In medium mixing bowl beat cream cheese, lemon juice, Italian seasoning, and garlic with electric mixer on medium speed until smooth and combined.

2. Spread cream cheese mixture into a deep 9-inch pie plate, or shallow serving dish. Evenly spread hummus on cream cheese layer. Top with cucumber, tomato, olives, feta cheese, and green onions. Cover and refrigerate 2 to 24 hours. Serve with pita chips and/or multigrain tortilla chips. Makes about 2-1/2 cups dip (16 servings).

Santa Cruz Chocolate chip dip for your Santa Cruz CaliBowls

1-8oz cream cheese, softened
1- stick butter, softened
2 tsp vanilla
2 tbsp brown sugar
1 cup powdered sugar
3/4 cup mini chocolate chips
3/4 cup chopped pecans (optional)

1. Cream together the cream cheese and butter.

2. Add vanilla and sugars. Fold in chips and nuts. Put in fridge.

3. It will keep up to 2 weeks in fridge. I always double the recipe because everyone loves it. I use cinnamon graham crackers to dip with it. Enjoy!

Servings: It usually serves about 20-30 people.

Seven Layer Dip:

1 (16 ounce) can refried beans (traditional variety) 1 (4.5 ounce) can chopped green chiles, undrained 1 tablespoon fresh lime juice, plus 2 tablespoons fresh lime juice for avocado layer 2 teaspoons chili powder 1/4 teaspoon ground cumin Salt 3 avocados, halved, pitted, flesh spooned out 1 cup sour cream 1/2 cup mayonnaise 1 cup salsa (drain to equal 1 cup if salsa is especially runny) 3/4 cup sliced canned black olives, drained 1 cup grated pepper Jack cheese 1/2 cup thin sliced

Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a the Santa Cruz 5cup bowl. In a La Jolla bowl 2.7cup bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a Second Santa Cruz 5cup bowl, mix sour cream and mayonnaise.
Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of Two separate Santa Cruz Ceramic bowls. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.

Warm Crab Parmesan Dip

Ingredients
1 (6 ounce) can crabmeat, drained and flaked
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1 1/2 cups grated Parmesan cheese
1 cup sour cream
4 cloves garlic, peeled and crushed
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a small baking dish, mix the crabmeat, cream cheese, mayonnaise, Parmesan cheese, sour cream and garlic.
Bake uncovered in the preheated oven 45 minutes, or until bubbly and lightly browned.

Yummy Easy "Gluten free" meal

I didn't feel like cooking last night so I decided to do something quick and easy. I had all the ingredients on hand from Trader Joe's and all gluten free.

Brown rice tortilla
shredded cheddar cheese
spicy sausage
pizza sauce

Spread pizza sauce on the brown rice tortilla
sprinkle the cheese
and squeeze out pieces of the Trader Joe's spicy sausage
and place apart on top of the cheese.

Put the tortilla pizza on a cookie sheet and bake at 420' until golden brown.

I served it with pineapple slices and of course served them in a beautiful 5cup white ceramic CaliBowl. The kids loved their pizza and didn't even know the tortilla was brown rice:) They enjoyed their pineapple slices out of the one cup Del Mar CaliBowls.

We were all happy CaliBowl campers.

I have recently gone gluten free with my diet for health reasons. I was so impressed with some products that I tried from Whole Foods. So I thought I would share with the CaliNation.

Gluten Free Pizza Crust
Gluten Free White Cake
Gluten Free Muffin Mix
Theses are all the 365 brand from Whole Foods

Not only light, flaky and delicious but so easy to work with. The Gluten free product do require more prep time. Since I used the 12 cup BIG SUR CALIBOWL it was easy and fun. The kids actually liked these better than other brands,but promised me not to put them on a Gluten free diet:)

Rachel Rays Classic- Shepherd's Pie

This looks so good. I will serve it in my Santa Babara 1.5 ceramic bowls.

This classic dish satisfies all cravings.
Ingredients
2 pounds potatoes, such as russet, peeled and cubed
Salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil (EVOO)
1 3/4 pounds ground lamb
Pinch of allspice
1 medium carrot, peeled and chopped
1 medium parsnip, peeled and chopped
1 medium onion, chopped
2 tablespoons all-purpose flour
1/2 cup beef stock or broth
1/2 cup dark beer
1 tablespoon Worcestershire sauce (eyeball it)
2 tablespoons sour cream or softened cream cheese
1 large egg yolk
1/2 cup cream
1 teaspoon sweet paprika
2 tablespoons flat-leaf parsley (a handful), chopped

Yields: 4 servings
Preparation
Fill a large pot with water, add the potatoes, place over high heat and bring to a boil. Add some salt and cook until tender, about 12 minutes

Buffalo Chicken dip

1/2 cup crumbled blue cheese or shredded
1/2 cup blue cheese salad dressing
mozzarella cheese (about 2 ounces)
or ranch salad dressing
2 cans (9.75 ounces each) Swanson® Premium
1/2 cup any flavor FRANK'S® RedHot® sauce
Chunk Chicken Breast in Water, drained
Assorted fresh vegetables or crackers

Directions:
Heat the oven to 350° F.
Stir the cream cheese in a 9-inch deep dish pie plate with a fork or whisk until it's smooth.Stir in the dressing, pepper sauce and blue cheese. Stir in the chicken.
Bake for 20 minutes or until the chicken mixture is hot and bubbling.Stir before serving.Serve with the vegetables and crackers for dipping.

I got this recipe from a good friend who lived in the Bay Area. She is originally from Peru and is now living back in Peru. It is always great to add an authentic dish to your meals.

Yuka is a root that not all stores carry i have found it at Safeway and food Max. you can also pick up a CaliBowl at Safeway"s culinary stores.

How to prepare:
Peel yuka root, cut into dipping size pieces.
boil water and boil until you can poke a fork through the pieces.
Drain pat dry. Put the pieces of Yuka on a cookie sheet and bake at 400" for until lightly brown.

Dipping sause to be used in a CaliBowl.

1 cup of evaporated milk, panela cheese from el mexicano or any other mexican market, 4 yolks (yellow part of the egg cooked) put the cheese in pieces in the blender, add the milk if you think it is too thick add more milk, add the eggs and blend. for a spicy dip add hot sauce to the blender.

Chicken Gumbo Recipe 3 c chicken broth (mine is homemade, canned stuff is stronger) 1 c cut up chicken 1 c diced tomatoes (if you use canned tom's, add juice; if fresh add sm can tomato sauce) 1/3 c rice 1/4 of a bell pepper, chopped 1/4 of an onion, chopped 1/2 c corn 2 tsp dried basil (less if fresh) 1/2 tsp pepper 1/2 tsp garlic salt Make sure you use cooked chicken; put all ingredients in a pan, bring to boil, simmer until rice is done. Enjoy!

15-ounce can black beans, drained and rinsed
1 1/2 teaspoons coarse salt
1/2 large white onion, finely chopped
1 teaspoon minced jalapeno pepper (seeds removed, if desired)
1 1/2 teaspoons minced chipotle in adobo
1 small clove garlic, minced
2 tablespoons plus 1 teaspoon fresh lime juice (from 1 to 2 limes)
2 avocados, pitted and peeled
1/4 cup chopped fresh cilantro
